THE DOMAIN
Located in the heart of the Chablis region, Domaine Milcent is a family business. We control our production from plantation to marketing with a constant objective of quality.
All the plots in our vineyard have been family owned for several generations and are located in the commune of Chablis itself. They are divided between the appellations of Petit Chablis, Chablis, Chablis 1er Cru Beauroy, Chablis 1er Cru Fourchaume, Chablis 1er Cru Vaillons and Chablis 1er Cru Vaucoupin.
We work the land with the utmost respect, this unique heritage which is our daily source of work helps us to express all that is best about the Chablisien terroir. We continue to re-plant and develop vineyards in areas which have been deserted since the phylloxera epidemic, to leave them to future generations.
Our vines are aged from a few years for Petits Chablis to more than 45 years for some Premier Cru.
VINIFICATION
If the vines are all around Chablis, the buildings are distant of 6 km by taking the direction of Avallon. We have indeed the chance to raise our wines in a well preserved authentic Burgundian farm at the place called «La Ferme de Pommard».
We harvest and vinify all of our production in a modern cellar built in 2017. Our wines are vinified only in temperature-controlled stainless steel vats. This is to preserve the aromas, natural fragrances, and freshness, which make the character so special of a Chablis.
