Origine
South of the village of Meursault, on the boundary of Puligny and above “Les Charmes”. The soil is stony, fairly deep, clay-limestone over marl.
Vinification
The grapes are harvested by hand and go directly into the press. The pressing operation is smooth and slow in order to extract the grapes’ best constituents. After a light settling, the musts are transferred into French oak barrels (20-25% new oak), where alcoholic fermentation (using indigenous yeasts) will take place, followed by malo-lactic fermentation. After 12-16 months' ageing, the first racking, then a light fining, are carried out. Bottling takes place at the end of the second winter following the harvest.
Notes de dégustation
Green gold hue, it will evolve towards pale gold. Aromas of white flowers, and occasionally, dried fruit (apricots), can be found on the nose.
The wine is usually very lively with a mineral character on the palate. It always possesses a lovely roundness, which gives it good length.
Mets d'accompagnements
This wine pairs perfectly with raw or cooked fish, such as turbot or lobster "Thermidor", as well as poultry or veal sweetbreads. It is also a nice match for fresh and matured cheeses, if not too strong. An old vintage is a perfect accompaniment to foie gras.
